Bacon Goat Cheese Quiche


In our family, breakfast is always acceptable for dinner. This LoSo quiche recipe is a favorite.

Quiche: the combination of pie, eggs and cheese…how can you go wrong? Spoiler alert: you can’t. The beauty of this recipe is that you can add any ingredients you have in your fridge: onions, ham, cheese, tomatoes, bell peppers…the list goes on and on. Its so versatile, so easy.

I had an extra pie crust in the fridge. You can buy a premade crust, but watch the sodium content. When you make your own, you are in control of how much salt is added and you have more freedom with the ingredients you want to add. Also, this recipe is in the mid level range for potassium. Only 169 mg per slice!

1 pie crust (homemade)
4 eggs
1/2 sweet onion, chopped
1/2 red bell pepper, chopped
1 oz goat cheese (Aldi brand, check sodium!)
5 oz sharp cheddar
dash pepper
5 slices cooked uncured bacon (Aldi), broken into pieces
1 1/2 c. half & half
1 Tbsp. flour

Preheat oven to 400F. Roll out crust and place in pie plate. Sprinkle flour and 1/2 of cheese on bottom.

In separate bowl, mix eggs, onion, red bell pepper, bacon and goat cheese. Add 1/2 & 1/2.

Pour over cheese and flour in pie plate. Sprinkle remaining cheese on top. Add a little fresh cracked black pepper on top.

Bake 30-35 minutes or until pie filling is solid and doesn’t wiggle too much.

Let cool a tad before cutting. Oh yeah!

I realize this is pretty fatty, but on the upside, its got low potassium!
