I absolutely love cabbage rolls, but hate how I can never cut through the thick part of the cabbage. I try to cut it, but the whole piece slides off and ruins the entire purpose of the “roll”. By the time I’m half way through the dish, I’ve already angrily slashed the whole thing apart into bite size pieces. At this point, my husband says, why don’t you make a deconstructed version? BOOM.
You can make this recipe with either ground beef or ground turkey depending on how much fat you want in your diet. Or you can go halvsies and mix em.
Also, if you’re in a hurry, buy the microwavable rice – the one that cooks in 90 seconds – but make sure it has no added salt.
2 tsp. olive oil
1 med. Onion, chopped
1 tsp.minced garlic
1 ½ lb. ground turkey
1 head green cabbage, chopped into 1” pieces
2 – 14 oz. cans loso tomato sauce
1 T. apple cider vinegar
¼ c. brown sugar
½ – 3/4 c. raisins
1 tsp. loso Lea & Perrins Worcestershire*
red pepper flakes to taste
1 pkg of microwavable brown rice – no salt added! Cooked
*Worcestershire is usually not gluten free, but Lea & Perrins version is
In a large saucepan, heat oil on medium heat. Add garlic and onion and cook until transluscent. Add ground turkey and break up as it cooks. When its almost all the way cooked through, add chopped cabbage. Add ¼ – ½ c. water and cover until cabbage is all the way cooked and translucent.
Add tomato sauce, vinegar, brown sugar, worcestershire, raisins, rice, and red pepper flakes. Stir and cook until all the way heated up.
Makes 12 servings, so you’ll have tons left over for lunches for the week. #mealprep
