Falafel Burgers

These quick and easy Falafel burgers are so delicious, they will instantly become a staple in your house. I had planned on making these for my lunches for the week, but my husband caught wind of it and it became our dinner…and there were no leftovers. No lunch for me! haha

I’d like to add that my husband is a dedicated carnivore, yet these delicious vegetarian burgers really hit the spot for him. Perfect for Meatless Mondays!

I love a good Tzatziki sauce with falafel, so I’ll post an easy one below, with separate nutrition info. It’s made with a 0% fat Greek yogurt, so feel free to load up…unless you’re watching your phosphorus, then a little dab ‘l do ya! Also, if you’re watching your potassium, these are very high in that regard. (Anything over 200 mg per serving is considered high)

These babies would make an awesome appetizer. Just divide dough into 16 mini burgers. Place a little dollop of Tzatziki on each one after they’re baked and sprinkle a touch of dill and tomato on top…super cute!

3/4 bunch fresh parsley (about 1 1/2 cups, but adjust according to your palette)
2 cloves garlic
Juice of 1 1/2 large lemons
1 tsp. cumin
1 15 oz can unsalted chickpeas, rinsed and drained (I took off the skins, cuz I like it that way)
1 Tbsp. tahini sauce
1/2 c. chickpea flour
1 medium jalapeno
1/4 tsp. salt
dash cayenne
pepper to taste

Blend all ingredients in a food processor.

Divide into 4 patties. Place on parchment paper, separately.

Freeze for about 15 minutes to firm up. Place on silpat or parchment paper to bake.

Bake 375F for 20 minutes on each side.

Tzatziki Sauce
1 c. any 0% greek yogurt – I like Fage
1/2 – 1 tsp. dill
juice from lemon or lime
1/2 cucumber, diced small
optional: 1/2 small dill pickle

Mix all ingredients and adjust dill and lemon juice according to your taste. If you’re not watching your sodium levels, a dill pickle adds a nice flavor/salt kick.
