As you may have read in previous posts, I have been crazy addicted to limes, tomatoes and cilantro all Summer. I can’t get enough. I’ve been making salsa at least once a week for the past 2 months. I know. I’m loco – but I’m cool with that.
This salsa is fresh and light. The lime gives it the perfect zing! I add minced garlic to amp the flavor even more.
All of this flavor comes with a little bitty sodium price tag of only 40mg a serving. I mean, you can eat 2 servings for that! COME ON!
I use Roma tomatoes because they aren’t as “watery” tasting after you pulse them.
You can easily whip this up in under 5 minutes. Talk about quick! I use my trusty Ninja to pulse this salsa up in seconds. Here’s what you do.
Add these ingredients to your food processor of choice:
6 Roma tomatoes (cube one and set aside – don’t add to processor)
½ small red onion (mince a small portion and set aside – don’t add to processor)
1 tsp. minced garlic – no salt added
¼ – ½ bunch of cilantro
Juice of 1 lime
¼ tsp. salt
½ jalapeno – optional
pepper to taste
Pour into bowl or Tupperware. Add cubed tomato and minced onion.
Here’s what I do. I take lime tortilla chips, ¼ oz fresh mozzarella and top it with salsa. It’s a perfect “come home from work or school” snack! (Make sure to calculate the nutrition information for both the mozzarella and chips!)
