Strawberry Goat Cheese Candied Pecan Salad


I’ve been completely obsessed with this salad lately. It’s amazing and super easy to throw together, especially if you make the candied pecans ahead of time. I mean, who doesn’t need candied pecans at their fingertips? Seriously. (see below for my recipe)

I love mixing half baby spinach and half romaine. Great flavor. Excellent crunch! If you’re watching your potassium, its best to stick to all romaine. Or if you just love spinach, make sure its baby spinach. Mature spinach has a much higher potassium count.

If you’re watching your sodium, goat cheese is an excellent source of protein with a quarter of the salt of any other ounce of cheese. This salad is wonderfully low sodium but higher in potassium. Luckily for me, since I’ve had a transplant, I no longer have a limit to my potassium and phosphorous. YAY!

I love Newman’s Own olive oil and vinegar dressing. There isn’t any sugar in it and you get a ton of flavor in just a tablespoon.

This is the perfect quick lunch or dinner. Gotta love it!

2 c. Lettuce, I like romaine and spinach
1/2 c. sliced strawberries
1 oz. low salt goat cheese (I buy mine at Aldi)
1 oz. candied pecans
1 Tbsp. Newman’s Own olive oil & vinegar

Mix all ingredients and chow down!

Candied Pecans
2 c. pecans, unsalted
1 egg white
2 T. water
1 tsp. vanilla
3/4 c. sugar
1/4 c. brown sugar
1 tsp. Cinnamon

Preheat oven to 250F. Whisk egg white until frothy. Whisk in water and vanilla. Add pecans and stir until well coated. In a gallon ziploc, add sugars and cinnamon. Add coated pecans to ziploc and thoroughly coat with sugar mix. Spread onto a greased baking sheet or spray sheet with non stick spray. Bake 60 minutes. Every 20 minutes stir pecans to prevent sticking and for even baking.
